The Spa Cookie

Ten Spa in Winnipeg serves the most delicious little cookie and many times I've thought - I should try to make something like that! On my last visit I pocketed a couple and set out to replicate the Ten Spa cookie. I did a few things differently, like I used ground rather than whole flax since unground flax has no nutritional value (can't absorb) and I also made them slightly less sweet than the original by only using a third rather than a half cup of each of the sugars. However, in the end these turned out quite well! In the recipe below I increased the sugar for a more authentic cookie but I think I will always cut the sugar back a bit!

INGREDIENTS

  • ½ c butter
  • ½ c brown sugar
  • ½ c white sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 c flour
  • 1 ½ c oats
  • ½ tsp salt, soda and cinnamon
  • ¼ tsp baking powder
  • 1 tbsp poppyseeds
  • 1 tbsp toasted sesame seeds
  • 2 tbsp coconut
  • 2 tbsp sunflower seeds
  • ¼ c chopped pecans
  • ¼ c ground flax
  • ½ currants

INSTRUCTIONS

  1. Preheat the oven to 350° F.
  2. Grease muffin tin (I use canola spray).
  3. Cream the butter and sugars until the mixture is light and fluffy and it lightens incolour  - at least five minutes.
  4. Add the vanilla to the egg in a small bowl and whisk with a fork.  
  5. Add the egg/vanilla mixture to the sugar and mix until well incorporated.
  6. Mix all the dry ingredients together in a bowl and mix well, then add to the wet ingredients until just incorporated – I “pulse” my stand mixer by turning it off and on (low speed).  
  7. Finally, incorporate the nuts, seeds and currants.
  8. Press 30 gram balls of dough (about 2 tbsps) into the wells of the greased muffin tin. 
  9. Bake until nicely browned (see Tips and Hints)

TIPS & HINTS

I used ⅓ of a cup of each of the sugars and, in my opinion, the cookies were sweet enough. However, use the ½ c as per the recipe if you prefer them on the sweet side.

Also, I trialed both lighter and darker bakes - which one was better...  it really depends on who you ask.  Both received great reviews.
