Shawna Bennett's Mixed Grill

Shawna promised that this is a great meal to share with friends and she was right. The Bennett's served this for lunch but it was also a hit for dinner! When we served it this past weekend, Ian Proven commented how much he enjoyed the creativity - by that he meant how one could choose the combination of flavours.

Most of the elements are grilled and the arranged and served on a large platter. Everyone is meant to "dig in" and enjoy! I'm sure when Shawna and Bruce serve this, presentation is next level! Do your best but whatever it looks like I can assure you, this is delicious.

INGREDIENTS

Grilled

  • Rib eye steak (with your favourite seasoning), sliced
  • Boneless skinless thighs (marinated with your favourite seasoning)
  • Marinated prawns
  • Asparagus
  • Cherry tomatoes on the vine (or skewered if they fall of the vine)
  • Fresh peaches
  • Sour dough bread - sliced about 1/2" thick and brushed with olive oil and balsamic vinegar

Accoutrements

  • Boursin cheese
  • Roasted red pepper jelly (in a small dish)
  • Corn relish (in a small dish)
  • Assorted mustards (in a small dish)
  • Fresh Basil or rosemary (tucked around for decoration)
  • Pickled red onion (scattered on the beef)

INSTRUCTIONS

Line a large cookie sheet with parchment paper and space the accoutrements leaving room for the grilled items.

Place the meat and asparagus down first then spread the tomatoes and peaches around, top the steak with picked red onions, and finish it off with basil or rosemary tucked among the elements for some green.

I served the bread separately in a basket but if there's room, bread tucked around the edges would be fabulous.
