Lara's Peach and Corn Salad

Lara made this salad a couple of times the summer of '25. Nice ripe peaches and perfect avocados definitely take this to a new level.

INGREDIENTS

  • 3 ears of corn
  • 2 large peaches – diced
  • 2 English cucumbers – diced
  • 1 red pepper – diced
  • 1 shallot – diced
  • ¼ c green onions – finely chopped
  • ¼ c chopped cilantro
  • 1 avocado – diced
  • 4 oz / 115 g crumbled feta

Icing

  • Juice of 1 lime
  • Juice of ½ lemon
  • ¼ tsp cumin
  • ¼ c olive oil
  • Salt and pepper to taste

Mix all of the dressing ingredients together.

INSTRUCTIONS

  1. Cook the corn. Grill on the BBQ, char in a frying pan, steam or microwave - whatever your preference!
  2. Let the corn cool and cut the kernels off the cob.
  3. Mix all of the salad ingredients, dress and serve.
  4. Make sure you taste and it add more salt and pepper as required.

TIPS & HINTS

This salad can be made ahead if time (an hour or so) and kept in the fridge. Lara chopped the vegetables "evenly" (all about the same size) and about 1/2" pieces. You don't want the veggies too small, but you do want them small enough that you get a nice mix of flavours in every bite!
