Dad's Favourite Oatmeal Cookies

To claim that these were Dad's favourite may not be completely true because Dad never met a cookie he didn't love! But... these were definitely high on his list! These cookies are rolled (like pie dough), cut and baked. Once cooled, sandwich the date filling between two cookies and then let them stand in a covered container until the cookie softens. They are like a handheld matrimonial square.

INGREDIENTS

  • 2 c butter
  • 1/2 c white sugar
  • 1 tsp salt
  • 1/2 boiling water
  • 5 1/2 c oatmeal
  • 2 1/2 c flour

Icing

Date Filling

  • 2 c dates
  • 3/4 c corn syrup
  • 2 tsp lemon juice
  • 1/2 c boiling water

Cook all ingredients over medium heat until the dates are soft and mushy then let it cool.

INSTRUCTIONS

  1. Cream the butter and sugar.
  2. Mix the flour, oatmeal and salt.
  3. Mix the dry ingredients with the butter/sugar mixture then add the boiling water.
  4. Mix until combined let it stand in the fridge for about 30 mins.
  5. Roll, cut and bake at 350 degrees for 10-12 minutes.
  6. Once the cookies are cooled, sandwich two cookies with some date filling and put in a sealed until the cookies have softened.

TIPS & HINTS

My mom used to make these a bit on the big side but obviously, you can use any size of cookie cutter you want!
