Aunt Jill's Favourites

In August of 2025, Curt and Lara hosted a group of life-long friends at their cottage. JC made his famous Paella and the Spanish cheeses, cocktails and wines were all delightful, however, of particular note were the cookies that came out after dinner. Not only did Wendy share her recipe (which she knows off the top of her head), she also shared the story behind the name of her delightful morsels. When Wendy's Aunt Jill was receiving end of life care, what did she ask for? Wendy's cookies! I think when my time comes, I may well do the same. This recipe is shared in honour of Wendy's Aunt Jill.

INGREDIENTS

  • 2 c butter (melted and cooled)
  • 4 eggs
  • 2 c white sugar
  • 2 c brown sugar
  • 2 tsp vanilla
  • 2 c baking chips (Wendy recommends a mixture of white, butterscotch and milk chocolate)
  • 1 1/2 c shredded sweetened coconut
  • 2 c rolled oats
  • 2 c corn flakes
  • 4 c flour
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 1 tsp salt

INSTRUCTIONS

  1. Melt butter and allow to cool.
  2. Mix both sugars, eggs and vanilla then stir in melted butter.
  3. Add the baking chips, coconut, oats and corn flakes to the sugar/butter mixture.
  4. Mix the flour, baking powder, soda and salt.
  5. Add the flour mixture to the dough.
  6. Use a teaspoon and drop dough onto a cookie sheet. They spread quite a bit so make them a bit on the small size.
  7. Bake the cookies at 350° F until they look slightly underbaked.

TIPS & HINTS

Wendy mentioned two things... 1) this is big recipe and it "halves" nicely; and 2) you can use whatever combination of baking chips that you like, however, the butterscotch chips are mandatory!
